Flavor is best when served at room temperature.
1 c. raw brown rice |
1/3 c. olive oil |
2 tbsp. red wine vinegar |
1 tsp. Dijon mustard |
1 tsp. salt |
1/8 tsp. pepper |
Dash nutmeg |
1 small red pepper, cut into thin strips |
1/2 c. finely chopped green onion |
1/2 c. chopped, pitted ripe olives |
1/4 c. chopped parsley |
Cook rice according to package instructions. While rice is hot,toss with oil, vinegar, mustard, salt, pepper and nutmeg. Refrigerate until cool, approx. 1 hour. Before serving, mix with remaining ingredients. Serves 6.
